Empyreuma (Gr. empyreus, 'I kindle'), the burned smell and acrid taste which result when vegetable or animal substances are decomposed by a strong heat. The cause of the smell and taste resides in an oil called empyrcumatic, which does not exist naturally in the substance, but is formed by its decomposition.
