Endive (Cichorium Endivia), an annual or biennial plant, of the same genus with Chicory (q.v.), has been in cultivation since classic times as a garden vegetable, its blanched leaves being much used as a salad. The green-curved variety is the staple one, the white-curved is good for summer and autumn, and the broad-leaved is used for stews and soups. In Britain the seed is usually sown from the middle of May to the end of June, and by a little care and protection plants may be kept fit for use throughout most of the winter.
